Marias Gamesa® Strawberry-Banana Ice Cream Cookie Sandwiches

Bananas, sliced and frozen |

Frozen sliced strawberries |
1/4 cup |
Heavy or whipping (35%) cream (cold) |

Liquid honey |

To food processor, add bananas, strawberries, cream, honey and vanilla; purée until smooth. If mixture is starting to melt, scrape into freezer-safe container and freeze for 10 to 15 minutes to firm up.

Scoop strawberry-banana ice cream onto 8 Marias Gamesa® Cookies. Cap each with a remaining cookie. Freeze for 1 to 2 hours or until filling is completely firm and frozen.

Tips: Roll edges of ice cream sandwiches in mini chocolate chips, toasted sweetened flaked coconut or toasted chopped nuts if desired.

When freezing fruit, arrange on parchment paper–lined baking sheet in single layer and freeze until firm, then transfer to airtight container and store in freezer. This method, called individually quick frozen, freezes pieces individually instead of in one big mass.
